Direct answer

Prepare the HACCP plan for a defined product and process family. Verify the flow on site, analyse significant hazards and justify control points and limits. Copying another factory's table can miss thawing, rework, allergens or holding stages in your own operation.

Decision and evidence

For each CCP, identify monitoring, deviation action, affected-product control and records. Validate the control basis and arrange verification separately from routine monitoring.

Technical basis

A HACCP system follows the Codex logic of preliminary steps and seven principles: hazard analysis, CCPs, critical limits, monitoring, corrective action, verification and records.

Practical questions

Can cooking temperatures be taken directly from an online table?

Support critical limits with evidence suited to the product, hazard, equipment and conditions. Consider time, the slowest-heating location and other relevant factors alongside temperature. General information does not validate every recipe. Competent review of scientific or technical evidence should establish actual control capability.

Should thawing frozen material for use in another recipe be added to the plan?

Assess thawing, holding, cross-contamination and rework flows. Consider ingredient history alongside the controls in the receiving product. Do not assume the new recipe falls under the old plan automatically. Establish acceptance, traceability and necessary control evidence before production begins.
