What Is HACCP? The 7 Principles and 12 Steps
The seven HACCP principles follow five preparation activities: assemble the team, describe the product, identify intended use, construct the flow and confirm it on site.

Direct answer
The seven HACCP principles follow five preparation activities: assemble the team, describe the product, identify intended use, construct the flow and confirm it on site. Hazard analysis, CCPs, limits, monitoring, corrective action, validation/verification and records then form the decision system.
Decision and evidence
Keep the evidence behind each control decision. A fixed CCP count or a copied limit cannot replace an analysis of the actual food and process.
Technical basis
A HACCP system follows the Codex logic of preliminary steps and seven principles: hazard analysis, CCPs, critical limits, monitoring, corrective action, verification and records.

Must a HACCP plan contain a fixed number of CCPs?
The number follows hazard analysis and the process's control structure. More CCPs do not automatically mean greater safety. Suitable hygiene practices may control some hazards, subject to assessment of their effectiveness. Explain the technical reasons for selected control points and candidates not selected.
Can cooking temperatures be taken directly from an online table?
Support critical limits with evidence suited to the product, hazard, equipment and conditions. Consider time, the slowest-heating location and other relevant factors alongside temperature. General information does not validate every recipe. Competent review of scientific or technical evidence should establish actual control capability.
