Food GMP, GHP and HACCP: How the Controls Fit Together
GHP describes good hygiene practices supporting food operations: premises, personal hygiene, cleaning, pest control and suitable operational handling. GMP is used broadly for good manufacturing practice, but the term alone does not identify a specific food certification programme. Ask what requirements and activities are actually meant, rather than treating these initials as interchangeable certificates.
Separate hygiene foundations from the hazard plan
HACCP adds a structured analysis of significant food-safety hazards and their control. Effective hygiene foundations support that analysis; a HACCP plan does not excuse ineffective cleaning or poor segregation. Cosmetics ISO 22716 and pharmaceutical GMP concern different sectors and must not be substituted for a food operation’s hygiene and hazard-control evidence.
Choose controls by hazard analysis, not a heading
Describe the product, intended use and actual process, confirm the flow on site and analyse relevant hazards with competent input. Decide which controls are adequate and whether a critical control point is needed. CCP limits, monitoring and corrective actions must follow the specific analysis and suitable basis, not an assumed universal value or a copied factory plan.
Hypothetically, a jam producer labels daily floor cleaning as its CCP while having no analysis of the actual heating and filling process. Renaming the cleaning form does not establish HACCP. Review the recipe, intended storage, process flow and significant hazards; examine the basis for any processing control and assign hygiene and HACCP records to their real functions. Do not prescribe a universal cooking temperature or declare the jam safe from a completed cleaning checklist.
Keep records and decisions at their proper level
Use hygiene records to demonstrate the foundational controls and hazard-plan records for the measures identified by the analysis. Distinguish monitoring from verification and validating a control measure from merely recording that it happened. Review relevant changes, exceptions and potentially affected product through the responsible business process.
Kayra can coordinate agreed food-hygiene and HACCP preparation; the operator owns implementation and genuine evidence. FAO/Codex provides guidance, not enterprise certificates. Any separate assessment needs its real programme and decision-maker, while statutory registration or approval remains a separate requirement and authority.
Official sources
Hygiene foundations and HACCP hazard control complement one another. Their preparation is not a private certificate or statutory approval.
Does HACCP replace GHP?
No. Effective hygiene foundations support hazard control.
Is every cleaning task a CCP?
No. CCP selection follows the specific hazard analysis.
Is food GMP the same as cosmetics or medicine GMP?
No. Applicable sector programmes and evidence differ.
