Food GMP and GHP: Preparing for a Hygiene Assessment
A food GMP/GHP assessment starts with products, activities, buildings and the requested assessment basis. Describe raw and ready-to-eat flows, water, waste, allergens, cleaning and outsourced work. Clarify whether this is a preparation review or an independent assessment under an identified programme; do not assume that the word GMP names a statutory food certificate.
Confirm what the assessment will cover
List the actual shifts, seasonal activities and areas to be observed. Make current instructions and genuine receiving, cleaning, pest-control and maintenance records available. Select evidence that explains how controls work in this operation, rather than presenting a generic folder as proof that every risk is controlled.
Observe the operating flow, not one clean moment
Walk the real production and storage routes with responsible staff. Compare observed movements with the documented flow, then investigate relevant discrepancies. Record what was seen, when, which product or area was affected and which person is responsible. An observation is not automatically a laboratory result or a decision that a batch is safe.
Hypothetically, raw-material crates pass through a corridor beside open ready-to-eat product during the late shift, although the daytime inspection shows an empty clean corridor. A single cleaning checklist does not resolve the crossing. Observe the late-shift movement, examine barriers and handling responsibilities, assess the actual exposure and agree a suitable correction and effectiveness check. Do not invent a past observation or declare segregation effective solely because the corridor was clean earlier.
Close findings with verifiable responsibilities
A useful finding links an actual condition to the agreed assessment basis and records the required action, responsible person and suitable follow-up evidence. Distinguish correcting one observed condition from preventing recurrence. The operator must evaluate any potentially affected product through its responsible food-safety process; consultancy does not release product.
Kayra can coordinate an agreed preparation review and organise real evidence. Implementation remains with the food business. FAO/Codex guidance informs hygiene controls but does not issue enterprise GMP/GHP certificates. Statutory registration or approval and any separately identified private certification decision have their own authorities and must not be represented as a consultancy outcome.
Official sources
Preparation and evidence review support the business; an identified assessment and its decision remain separate from statutory food-establishment registration or approval.
Must the review cover actual shifts?
Relevant shifts and activities must be represented so the review reflects actual work.
Does a clean corridor prove segregation?
No. Assess real movements, exposure and the suitability of separation.
Can consultancy release an affected food batch?
No. The responsible business process owns product evaluation and disposition.
