HACCP: Choosing Preparation Support and Receiving a Usable Plan
Describe the products, intended consumers, actual process and hygiene weaknesses before requesting HACCP preparation support. Identify whether you need a first plan, review after a change, staff instruction or a readiness assessment. Ask for a written scope covering the real operation rather than an unspecified certificate package.
Define the work before comparing consultancy offers
Check food-process competence and access to the people who know purchasing, production, maintenance and distribution. The agreed work should include on-site flow confirmation, hazard-analysis reasoning, control responsibilities and suitable evidence for validation and verification. A folder of generic procedures or an impressive logo does not demonstrate that the adviser understands the hazards in your product.
Test the handover with an actual recipe change
Agree which documents and explanations the business receives, who approves operational decisions, how gaps are recorded and what remains unresolved. Staff should be able to explain monitoring, deviations and responsible product handling using the plan. Consultancy availability and independent assessment authority are separate questions.
Hypothetically, a sauce producer replaces a refrigerated recipe with a shelf-stable claim after adding acid, and a proposal promises a copied HACCP plan without reviewing formulation or processing. Require an explicit evaluation of the actual recipe, intended storage and relevant hazards by competent people, supported by suitable evidence. Do not infer shelf stability from the ingredient addition or copy another product’s limits. Keep the unverified claim unresolved rather than sell the template as approval.
Keep implementation and assessment decisions with their owners
Accept a handover that identifies current versions, assumptions, missing evidence, actions and responsible staff. A useful plan explains the operation; retrospective invented monitoring records do not repair missing implementation. Review further changes through the business’s food-safety process, including appropriate reconsideration of hazards and controls.
For a request to Kayra, provide the document sought, actual activity and existing evidence so the request scope, relevant authority and impartiality can be reviewed. The food operator owns implementation and product decisions; an actual identified assessment body makes its own decision under its stated programme. FAO/Codex guidance is not a register of approved HACCP consultants and does not issue business certificates. Preparation does not replace statutory food registration or approval.
Official sources
Select concrete preparation and handover tasks; consultant selection does not select or guarantee an independent certification decision.
Is a copied plan sufficient after a recipe change?
No. Review the actual changed process, hazards and evidence.
Does adding acid prove shelf stability?
No. A competent product- and process-specific assessment needs suitable evidence.
Does adviser selection guarantee certification?
No. Preparation and the actual assessment decision are separate.

The exact records for HACCP: Choosing Preparation Support and Receiving a Usable Plan depend on the confirmed scope. Current, consistent and traceable information reduces avoidable revisions.
Scope and decision verification
For a request to Kayra, identify the document type, actual site and activity, assessment basis, existing evidence and decision owner. Scope, actual authority and impartiality are reviewed before accepting the work. Producing client-specific HACCP plans, procedures or records to establish, implement or maintain a food safety management system is not offered. General information on Codex principles or general training differs from that system-design work. A separate product assessment, test or regulatory filing requires its actual programme, competent actor and permitted scope to be checked; this page and ISO 22000 accreditation do not prove approval to issue HACCP certificates.
