HACCP: Applying the 12 Steps and Seven Principles to a Real Process
Establish a competent HACCP team, describe the product, identify its intended use and users, draw the process flow and confirm that flow on site. These first five steps establish what the plan actually covers. Include outsourced operations, rework, storage and relevant shifts; a diagram copied from another factory is not confirmation of your operation.
Complete the five preparatory steps before assigning CCPs
Good hygiene practices provide the foundation. Check cleaning, personnel hygiene, pest control, maintenance and separation against actual conditions. A weak foundation is not repaired by calling every cleaning task a critical control point. Decide which significant hazards need control through the HACCP plan using product- and process-specific analysis.
Connect each principle to a usable decision and record
Steps six to twelve apply the seven principles: analyse hazards; determine CCPs; establish validated critical limits; establish monitoring; specify corrective actions; validate the plan and establish verification; and keep suitable documentation and records. Record the reasoning for the control selected, who measures what, and what happens when control is lost. Do not borrow a universal cooking temperature or testing interval from an unrelated product.
Hypothetically, a cooked lentil spread is cooled and then blended with a raw herb mixture, but the flow diagram stops at cooking. Confirm the actual post-cook addition, ingredients, handling and intended ready-to-eat use. Revisit the hazard analysis and control options with competent staff. A satisfactory cooking record does not by itself control contamination introduced afterwards; do not declare the later operation safe or a CCP without the appropriate analysis.
Separate monitoring, validation and verification
Monitoring tells the responsible operator whether a defined control is being maintained in operation. Validation obtains evidence that the chosen measures can control the relevant hazards; verification checks that the implemented system works as intended. Link real deviations, affected-product decisions, corrections and follow-up to the plan. Changes in recipe, equipment or flow can require reconsidering the analysis and its evidence.
For a request to Kayra, provide the document sought, actual activity and existing evidence so the request scope, relevant authority and impartiality can be reviewed. The food business implements and maintains its controls. FAO/Codex guidance explains HACCP and does not issue a company certificate. Any named private assessment and statutory food-establishment registration or approval follow their own actual competent routes.
Official sources
Apply the steps to the actual product and flow; preparation does not replace the operator’s control decisions or an independent assessment.
Are 12 steps 12 separate principles?
No. Five preparatory steps precede application of the seven principles.
Does the cooking record control later raw additions?
Not automatically. Include the actual later operations in the hazard analysis.
Does FAO issue our HACCP certificate?
No. Its guidance is not company certification.

The exact records for HACCP: Applying the 12 Steps and Seven Principles to a Real Process depend on the confirmed scope. Current, consistent and traceable information reduces avoidable revisions.
Scope and decision verification
For a request to Kayra, identify the document type, actual site and activity, assessment basis, existing evidence and decision owner. Scope, actual authority and impartiality are reviewed before accepting the work. Producing client-specific HACCP plans, procedures or records to establish, implement or maintain a food safety management system is not offered. General information on Codex principles or general training differs from that system-design work. A separate product assessment, test or regulatory filing requires its actual programme, competent actor and permitted scope to be checked; this page and ISO 22000 accreditation do not prove approval to issue HACCP certificates.
