HACCP: Preparing for an Assessment and Closing Real Findings
Identify whether the visit is an internal verification, preparation review or independent assessment under a named programme. Confirm the site, products, process, shifts and applicable criteria with the actual assessor. HACCP guidance alone does not define one universal certification audit, duration or pass score. Make the current plan, responsible staff and genuine operating evidence available.
Agree the assessment basis and actual operations
Plan observations around significant hazards and the controls actually selected. Compare the confirmed flow with real work, hygiene conditions, relevant CCP monitoring, measuring equipment, deviations and verification. Sampling a neat folder is different from establishing that staff implement the plan during the relevant operation.
Follow a control failure through evidence and responsibility
For a finding, identify the observed condition, requirement, relevant records, responsible person and action. Separate an immediate correction from preventing recurrence and verifying effectiveness. Where product may be affected, follow the operator’s responsible food-safety process; the person conducting preparation does not authorise product release.
Hypothetically, a broth line’s heater display appears normal during a visit, but a steam-valve bypass was used on the previous shift and the required product-monitoring record is missing. Examine the actual equipment arrangement, applicable validated limits, genuine time and product records and responsible decisions. Do not replace the missing record with a new display photograph, fabricate yesterday’s values or assume the affected batch complied.
Close findings with real implementation evidence
Maintain a finding register showing scope, evidence, action owner, completion and suitable follow-up. Confirm that revised instructions reached relevant staff and that checks address the cause rather than just the appearance of compliance. An action promise or template alone does not demonstrate an effective correction. The identified assessor applies its own review and decision rules.
For a request to Kayra, provide the document sought, actual activity and existing evidence so the request scope, relevant authority and impartiality can be reviewed. The business implements controls and owns product decisions. FAO/Codex guidance is not a business certificate or an assessor’s approval. Any private certification decision and statutory registration or approval are separate; do not promise a pass date or predetermined outcome.
Official sources
Prepare actual operations and authentic evidence, then resolve findings through their responsible control and decision processes.
Does a current heater photo replace a missing record?
No. It does not establish the previous operation’s conditions.
Who decides on affected product?
The operator’s responsible food-safety process, not preparation support.
Does HACCP guidance specify one audit duration?
No. Confirm actual scope and criteria with the identified assessor.

The exact records for HACCP: Preparing for an Assessment and Closing Real Findings depend on the confirmed scope. Current, consistent and traceable information reduces avoidable revisions.
Scope and decision verification
For a request to Kayra, identify the document type, actual site and activity, assessment basis, existing evidence and decision owner. Scope, actual authority and impartiality are reviewed before accepting the work. Producing client-specific HACCP plans, procedures or records to establish, implement or maintain a food safety management system is not offered. General information on Codex principles or general training differs from that system-design work. A separate product assessment, test or regulatory filing requires its actual programme, competent actor and permitted scope to be checked; this page and ISO 22000 accreditation do not prove approval to issue HACCP certificates.
