Separate the plan from implementation evidence
The HACCP plan describes how hazards will be controlled; records demonstrate that controls actually operated. Include product descriptions, a confirmed flow diagram and hazard analysis. Link monitoring records to production date, batch and responsible person. Blank forms are not evidence of completed checks.
Use a deviation record to assess readiness
For an illustrative temperature deviation, examine identification and isolation of the affected batch, product disposition and prevention of recurrence. A general 'corrected' note leaves important questions unanswered. Consider measurement reliability and continuity between shifts when planning the preparation work.
Distinguish validation from verification
Evidence that a control measure can control its intended hazard supports validation. Checking that the plan is followed and works as intended is verification. A changed recipe, pack, shelf life or production line can require reconsideration of the existing evidence.
Provide inputs for cost and scheduling
List product families, lines, shifts, existing hygiene programmes and required measurement or analysis work in the quotation brief. Separate consultancy, laboratory and external assessment charges. Kayra can support closing record gaps, but cannot guarantee an external body's decision, laboratory result or Ministry approval.
