HACCP Plans: Critical Limits, Recipe Changes and Product Deviations
HACCP establishes controls for significant food safety hazards. The plan must reflect the product and actual process rather than another factory's table with names replaced.

Must a HACCP plan contain a fixed number of CCPs?
The number follows hazard analysis and the process's control structure. More CCPs do not automatically mean greater safety. Suitable hygiene practices may control some hazards, subject to assessment of their effectiveness. Explain the technical reasons for selected control points and candidates not selected.
Can cooking temperatures be taken directly from an online table?
Support critical limits with evidence suited to the product, hazard, equipment and conditions. Consider time, the slowest-heating location and other relevant factors alongside temperature. General information does not validate every recipe. Competent review of scientific or technical evidence should establish actual control capability.
Is reprocessing always a solution after a critical-limit deviation?
Assess the deviation and its product effects. Evidence must show whether reprocessing reliably controls the hazard; some effects cannot be corrected later. Segregate affected goods pending an authorised decision. A satisfactory repeat measurement alone does not explain the earlier deviation.
Should thawing frozen material for use in another recipe be added to the plan?
Assess thawing, holding, cross-contamination and rework flows. Consider ingredient history alongside the controls in the receiving product. Do not assume the new recipe falls under the old plan automatically. Establish acceptance, traceability and necessary control evidence before production begins.
Does the supplier retain every HACCP responsibility for a purchased intermediate product?
Your acceptance, storage and subsequent processing matter alongside supplier controls. Explain which hazards were controlled and under what conditions. Establish specifications and change notifications. Supplier certification does not remove assessment of temperature or contamination risks introduced at your own premises.
Does a HACCP certificate replace official operating permissions?
Food-business registration, approval and other legal duties require separate consideration. Implementing HACCP or holding a private assessment document does not automatically complete those procedures. Verify the service basis, scope and customer acceptance. Distinguish plan development, assessment and official processes in the quotation.
